Caprese Couscous


I LOVE COUSCOUS!
However, I am forever trying to get Dad to partake in the festivities. I decided to attempt this Caprese couscous... (For those who have not had the pleasure of couscous it is basically pearl pasta). 


1. boil about 1 cup of couscous, and the them simmer until pasta is cooked. 


2.  While pasta is cooking chop tomatoes in half, mozzarella into cubes, and basil into shreds. 


Of course, if you have read any of my posts you will know that the munchkin always has to tast test. Tonight she was a little ball of energy, and In between tastings she was running around the kitchen terrorizing anything in her way.

3. Throw a couple chicken breast on the George foreman.

4. Drain pasta, and mix in the rest of the ingredients. 

Yum yum (and Dad actual ate it)!!
(1/4 of my chicken was cut off for the munchkin.)

And of course the munchkin did too...
(However, we learned couscous is very hard to eat without utensils, it was everywhere).
